Here's a hint. It's tricky but doable. When fighting three creatures try to do the following. put the least dangerous critter on your flank. However, first wear down that creature by giving them a number of hits. You can do this for all of the creatures. If you find yourself getting into trouble and need a breather, you can try facing each creature in turn before it attacks you...tough but doable with experience.
Never let a new creature that enters the room engaged you from any direction except facing. Keep your opponents off balance and keep the off balance opponents on your flanks. Wear the best armor you can with the lowest possible hinderance.
If you are in a situation where there is a large difference in one extra opponent, consider using the tank approach. Use armor that will protect you from heavy damage and drop down to some lower critters for a while. If you take a big hit, back off and try again after you recover.
Choose your attacks carefully. Don't go for the big attacks. Stay conservative and maintain your balance at peak, your stamina and health at peak. Once anyone of these wears down, you are extremely vulnerable. Keep them all high and you'll be more effective.
Concentrate on getting multi-ops for short periods of time. Don't try to get lots over a long period of time or you'll greatly increase your risk of losing anything you've gained.
And finally, but most importantly, choose the creatures you practice with carefully. Whenever possible choose creatures that hit more often but with less hit points damage. Heavy hitters are more likely to take you out with one blow.

PS, the changes to stamina should indirectly help keep you healthy when trying to gain multi ops.
