Materials would be, in order of toughness,
Clay(made from sand and water)
Molding Clay/glue(alchemstry)
Wax(Alchemstry)
stone(mining)
metal(mining, smithing)
tools, chissels, hammers, bare hands(getting clay in the gaunts/gloves could be a problem)
with or without a pattern,
with animal lore or apprasial for freeform scuplt (sculpting others/things)
Could used with smithing for Casting(wax mold burnout) both jewelry and non forged weapons(low quality or single smelt metals[Ie can not be pounded])

(also having working in the business for 3 years you can't sculpt glue)

You can, but it's rather Time Consuming, the same way you sculpt sugar glass. If you can force the glue to dry faster you can sculpt it, though its more of a building.
Either way, the glue is ment for repairing sculpting, using glue to put multiple blocks together.
Ice kind of falls below stone in strenght needed, but above stone in acuracy needed.

I actually have a sculptors kit on one of my chars somewhere.... Can't remember where it is from been several years.
