Around 160 ranks I started to notice that I was having a hard time training with workorders. I assume it's just a rough spot, but all the work orders I receive when I ask for hard I completely understand when studying the pattern, which tends to result in about 1 mindstate per item completed.

What material are you using? If you're working in cloth, the materials from easiest to hardest are burlap, wool, linen, cotton and silk. You may need to move up a rung or two in difficulty.
If you're working in leather, then I'm afraid the society only sells rat-pelt and cougar-pelt, and those are both very easy to work with. So you'll either need to harvest some more difficult leather, or jump sideways to cloth.

Yeah, what Illiena said about material is pretty important. If you're mastercrafting the easy material on what should be "hard" work orders, you should probably step up to the next tier of materials to increase the challenge of crafting the item. I know that with cloth outfitting, I did hit a plateau where I was getting work that wasn't that hard for me and I had to step up material difficulty for a few ranks until I got harder work and was able to go back to easy materials.
You skillfully remove the vanilla cheesecake from your abdomen leaving the wound no worse than it was before.
