Are these craftable, or do you just have to use the generic ones from the crafting society?

You can't explicitly make backing yet, at least for the time being.
In addition, I don't think backing material can show up in a crafted product's tap/look/analyze/appraisal/etc (similar to hilts for swords, padding for armor, etc), at least for the time being. My understanding is that this is something that is meant to be added in the future.
Uzmam! The Chairman will NOT be pleased to know you're trying to build outside of approved zones. I'd hate for you to be charged the taxes needed to have this place re-zoned. Head for the manor if you're feeling creative.
