I've got nothing against eating meat, but both my husband and son whine about eating vegetables. A lot of the times I will alter recipes and add chopped up veggies so that they don't even know they are eating them. This is my Sneaky Lasagna recipe.

Ingredients:
1 package of lasagna noodles
8 oz of mushrooms finely chopped
1 large zucchini finely chopped
1 lb ground turkey
1 tomato thinly sliced
1 jar pasta sauce
1/2 onion finely chopped
2 tbl parsley flakes
16 oz cottage or ricotta cheese
8 oz shredded mozarella cheese
1/4 cup of grated parmesan
1-2 eggs
1 clove garlic chopped
cilantro, basil, italian seasonings, salt, pepper to taste

-Brown the onion, garlic, zucchini, mushrooms and ground turkey in a pan, breaking the meat up into small pieces. Drain off the grease, and add seasoning.

-Cook lasagna noodles per directions on box and drain. You may want to pour cool water over them so you don't burn your fingers when building the lasagna in the pan.

-Mix eggs, ricotta/cottage cheese, and parsley in a bowl.

-Using a deep lasagna pan,(It's a good investment if you don't already have one!)start to layer the ingredients. I usually add a little sauce to the pan first, so that the noodles don't stick. Then layer with noodles, meat mixture, sauce, and cheese mixture.

-Finish with a noodle layer last. Spread a thin layer of sauce and then arrange the tomato slices on top. Sprinkle the shredded cheese over the tomatoes.

-Cover with tin foil. (Important step, do not skip!)Bake at 375 degrees for 30-45 minutes. Take off tin foil in the last 5-10 minutes so that the tomatoes caramelize a bit.

Ground beef can be substituted for the ground turkey, but I think it tastes just as good and it's a lot better for you. Less grease to drain too.
