Who doesn't love quesadillas?! My husband taught me how to make a mix so that I can enjoy them anytime I wish, so I thought I would share it with all of you.
Ingredients:
2 tablespoons of butter
1/2 an onion sliced as desired
1/2 cup of julienned green peppers
1/4 cup of diced tomatoes with chiles
2-3 cups of your favorite meat/seafood
Salt, pepper, cilantro, diced jalepenos (we keep a jar of cilantro and jalepenos that we make up in the fridge - diced jalepenos in olive oil mmmmm)
Take a saute pan and place it over medium heat, add the butter (yes bad for you but tastes so much better than margarine), then the onions. Stir occasionally until onions are a light tan. Drop the temperature down to medium-low, then add your meat or seafood. tomatoes with chiles, and seasoning. After five minutes, add your peppers and drop the temperature down to a simmer. Now let it simmer until the water is just about gone and your peppers have softened, stirring every once in a while (don't over-stir here).
Once the liquid has disappeared, you are ready to put your mix in a container. Now the next time someone wants a quick meal - you have quesadilla mix ready to go!
This mix can be used in a myriad of ways - in your lasagne, over noodles... experiment!
