So, I've only made a few shields, but here is some feedback -

Overall, I love the system.

It does seem to me that the large shields may be a little too difficult? I've got about 270 mech in plat, and all the shield techniques, and I can't touch them.

I can handle mediums, it seems with little or no problem.

Would it be possible to put something in the instructions that indicates you need the same metal handle as the shield?

I don't have any medium shields on me, so i can't yet comment on the protection.

On another note, I did try to reclaim the metal from a very very bad experiment, and I couldn't:

You begin to study the instructions and slowly understand how metal item reclamation works. To begin you will need a forged metal item that has completed the crafting process. Just drop it into the crucible, and begin stirring to smelt the item back down and reclaim the metal used to forge it. Some items may not be reclamed due to the poor quality of the metal used, and always you will be left with less metal than was originally used to make it.
You scan the reclamation instructions with a glance and completely understand all facets of the design.
You now feel ready to begin the crafting process.
Roundtime: 4 sec.

You drop a steel-alloy jousting shield.

Haha, DROP means PUT. I guess I should expect folks to interpret things literally... I'll get that changed to PUT.

The large shields are meant to be hard. If we made them cappable at 275 ranks, here would be nothing to fill the next 1725 ranks with :P

That being said, you should be capable of making storebought quality Kite shields, and get close to capping them if you use the best ingredients and quality of tools. If you have armorsmithing as a career that would give an added bonus. What messaging do you get when studying the kite shield instructions?

I'll try the kite shield...haven't yet :).

As for the reclaiming, part of it must've gotten cut off, because i tried PUT first (because it was intuitive! or i just know DR's syntax well enough, which is scary), but it said it was too wide to fit in the crucible:

So that's good :) i think I overlooked it because I thought it was with the other med shields. I'll see what I can pull off with it.

This is appraising as a paladin, but I approve! The Kite Shield was a great fit.

One question - is Outstanding quality capped? I keep getting outstanding for the ingots (and this shield too), but I thought I had gotten masterful before, and thought that was capped?

This is using the techniques, and refined steel.

No, outstanding is not capped, but it is very very close. You might also try using bronze to make some of the harder shields. Bronze is an easier metal to work with, and the added skill bonus might allow you to get something decent going.
