I hit 40th circle, and I seem to have stalled out. I could do what I usually do, hunt Snobbies, work on magic and listen to targetted, but that just does not seem appealing to me. I was wondering if anyone had any suggestions on how to get out of these 'doldrums'.

Spend time in a library. Try your hand in the forge, or at tanning or embroidery. Set up and run a game. Explore a little, either on Aesry itself or somewhere else in the world. You sound like you need a break from training.

Attaching yourself to a lower level character and outfitting them some or buffing them on a hunt is generally good fun.
Plus if you find a real lowbie, you get to hear them make awestruck squeaks at pretty much everything you wear and do. Massive ego funtime.

Set some goals for yourself that are outside of your normal training regiment. Are there some titles that you have seen that you'd like? Can you swim the Faldesu?
Aside from being inextricably addicting, Dragon Realms has never gotten boring for me because I always find another milestone or goal to try and reach. Even after taking two characters to 150th, I still have goals that are years in the future, that keep me exploring.
Once in awhile you have to shake things up, and forget the grind.

I really recommend exploration. There are tons of places that you haven't been to in this game. Don't use maps, just explore. Thats my cure for the doldrums. You might die occasionally but thats part of what makes it fun.
Otherwise, make new friends. Friends make the game more fun, even for a loner like me

Develop your character and brainstorm some really cool concepts that are still achievable.

Try roleplaying a bit. Circle grinding is boring. REAL boring. That's why people risk their character's deletion by afk scripting it at hours they feel they can get away with it. Listen to some other classes. TEACH some other classes. Go someplace people are, hang around with them and see if something fun crops up.
Run through the title system. Find a title you REALLY like, then work towards that. I'm currently aiming for a title myself, and though it may result in a lot of time spent in jails and several fines before a variety of judges, I find it much more enjoyable than "Hey you! You need xxx in medium edged! You also need xxx in heavy crossbow, and xxx in target magic! Then maybe you can advance!"
You could also pick up some other skill. Lockpicking and disarming are handy skills to have around other people. Try another armor, try another weapon.
If you're really bored, head back to the crossing or riverhaven. Find a truly new (Well, if those exist anymore, the best you might find is an alt or a necromancer-commoner-in-training) player, pick up a weapon type and armor type you've never used before, then go hunting with them. Don't forget to share the beneficial magic with them. They might enjoy a capped sure footing to go along with your company.

I've taken up stealing i have near 200 ranks now and i still find it fun form either stealing from shops or other people.
But the best thing to do is to start being more social. If you do that you will be amazed on the variety or events or situations that will be thrown at you, they always lead to good fun.
