Can these two features be altered at all?
For instance, take a halfling. Could his height be altered to "surprisingly tall for a halfling?" or age altered to something age appropriate but more interesting?

Height is a general field that conveys your stature to people... short, smaller than normal for your race, average, taller than average for your race, tall. No doll-like, no midget, no colossan heights, especially not if it conflicts with your race -- like a giant dwarf.
I'm not sure if they can do age, since you can change your descriptor via age set descriptor.
