At 40 trains, my Warpath seems to be doing very well.... cruising through trains and having success in both offense and defense out on the hunt. Still.... I was wondering if I should slow/stop transformation trains and focus on some manipulation. Also... I have yet to train in MOC for fire spirit. Is my single training in MIU and Arcane Symbols overkill? I hardly ever use wand or scrolls. Should I stop/start training in them? Any advice or suggestions would be much appreciated.

If you are using fire spirit, a couple of ranks of MOC are excellent value. Returns diminish quite strongly, but you ought to have at least 1 rank in it though going beyond 3 will rarely get you any offensive benefit.
If you are doubling first aid for skinning rather than other reasons, I recommend getting some survival.

40 in each MIU and AS is plenty and not much of a need for more if you'd rather spend the points somewhere else.
Transformation lore is on you whether you want it or not, helps with your healing rt and will let you cast 1150 more often when you get it, can't really think of what else it helps off the top of my head. Just make sure when you stop training it to end on a multiple of three because it is at every three ranks that your rt is reduced by 1 second. At cap with 57 ranks of transformation lore you will have zero hard rt when healing but I know several empaths at cap who have yet to train any transformation lore.
Manipulation lore will increase your chances of instantly kill your target on a successful warding roll. However, looking at your skills I can say for certain that you aren't warding things 99%(There is always that 1% fumble) of the time and may find it more worth while to train more in empath spells to increase your CS before worrying about manipulation lore. It is all in what you want though, more CS means you will hit more often and more lore means that some of your casts will count for more when your boneshatter does land.
You don't really need MoC for fire spirit and can get along just fine without. Training in it increases the minimum number of creatures you will hit with the ball splash, but I am sure you've noticed you already hit quite a few without it and quite often.
One suggestion is that you train more physical fitness, you only have enough for max health it looks like. My reasoning is pretty simple, it will help keep you alive more because it is the primary skill that aids in avoiding creature maneuvers such as burrows and centaur kicks as well as spells like boil earth, ewave, and spike thorn. I would say no less then 1x in it, and really urge you to push for 2x if you can. It is a cheap skill to train in and well worth the cost.
Something you may want to consider is where you will be hunting in the future, depending on your location you may need more climb/swim to get into hunting areas. Ask around and plan accordingly.

At 40 trains as a pure caster, you can cruise through most areas. However, I should like to point out that you are NOT what is commonly called a warpath; you are a pure caster who wants to hunt rather than stay in town healing. You don't use a weapon; the training path for a true warpath is somewhat different. I have switched my empath back and forth several times between using weapons and not; currently she is in her "pure" form, although I will probably switch her back to using THWs before May 20th. (I have a fixskills saved up).

Your training plan looks pretty solid to my eyes, actually.
Transformation lore is helpful in reducing healing RT and gaining more uses of regeneration when you get that spell. My empath is trained as a caster hunter as well and I've never really thought that manipulation provided enough benefits to warrant training in the skill. I did train in manipulation for a while, but I found I was crit killing my targets a lot more often than I was insta-killing them through manipulation lore.
MOC is nice, but not really necessary. I didn't pick up any ranks until after I'd capped and I don't think I missed anything. With your summoning skill, you'll be able to hit multiple targets anyways. MOC simply increases the minimum number to hit, but it's extremely expensive. Perhaps prohibitively so at your level. To be honest, I use web bolt more than I do fire spirit. It's a fantastic way to disable, and I follow it up with a cast of empathic assault since it won't burn the webs and it'll give me follow-up CS damage because I have telepathy lore.
Whether you train in MIU and arcane symbols depends on what you need. They're cheap for runestaff defense ranks, and continued training in them will allow for longer durations on casting defensive spells. Increased ranks will also make Fash'lo'nae's gift (spell 1750) much more useful, and it would help determine which spells are available to you.
The two big things I noticed are your physical fitness skill and your empath ranks. They've been pointed out before, but I'd definitely recommend increasing them whenever possible. Physical fitness factors into a lot of systems, and you're really cheating yourself out of a lot of benefits. Not to mention it's extremely cheap to train in. You'll likely also want to focus on your empath ranks to increase your CS, which will make hunting easier. Just bear in mind that the CS benefit per rank will drop when you get to level + 21. At this point, since you say you're doing pretty well offensively, you won't need to do anything extreme like a fixskills. Just focus on pulling empath spells up whenever the points are free.

This cannot be emphasized enough. Empaths are the only "pure" casting profession that can train 3x in PF.

A pure casting empath is safer and more efficient when hunting than a true weapon using "warpath"; if you do go that weapon route later on, it will be just for the challenge. Note that I have no transformation lore. I have a ton of FA skill, which reduces the RT from using herbs; if I need to cure wounds while hunting, just having a lot of empath spell ranks drops the RT. If I want to cure scars, using herbs is actually faster since I have no transformation lore.
