<<You read quickly through the fish instructions. You find that you recognize almost all of the folds, and think that you could probably make this without too much trouble. You think it fairly obvious where the first fold would go.
My question is, should I move on to what is harder, or should I stick with the fish since it still seems to teach me the same. What would be a step up from the fish instructions, anyways? And about when will it stop teaching me? Thanks for the help!

Stick with the one you have or, actually, step back one. You learn the best using a pattern that says "pretty sure" or "eyes closed" since you won't waste as much time on botched folds.
