Usually don't make these, but I think I've narrowed my options down to a few choices and want to check if there's anything I missed.
My guess is that mountain giants will be my best bet, but I don't particularly like ranged creatures, so i wanted to double check first.
Guild is thief, so boxes are a must, and I'd prefer to stay on the mainland. (I'm sure celps would work, but no boxes and I want to avoid the islands if I can) Illithi/Forf would be ideal, but I can climb the UG so any mainland spot is just a few minutes from Illithi anyway.
70 reflex, 60 agil, 40 str/stam, 45 disc(pumping tdps into this to catch it up now.
390 short bow, 380 ME, 300 LE, 360 brawl, 330 LT
520 eva, 415 par, 385 shield, 460 mo
Stealths are about 200 or more ranks above everything else except for evasion.
At present I'm in Zealots which are moving most skills swimmingly, except evasion which is taking like an hour to Lock.
If necessary I can just change my regimen and not 34/34 evasion to train, since its so far ahead of everything, if that's my best bet than so be it. I just wanted to check if there's a critter I'm overlooking. Pretty sure I'm not strong enough for chata, sky giants, apes, or black gobs yet.

I'm in mountain giants right now and enjoying them. They really don't used their ranged attack but once or twice so that might not be an issue for you. They do hit quite hard though. Also, I'd be happy to let you pop my boxes for me ;)

Tuskies are pretty rare you just got to pay attention and handle them differently if you can. Highlight them nice and bright

I missed if you're premie or not, but gremlins are fantastic at those ranks if you want boxes. Gremlins are pretty awesome in general IMO.

I'm looking for some advice as to what to hunt next. I'm currently in young gryphons, but the primary weapons learning is really slowing down and it is becoming increasingly difficult to find a spot. I tried shalswar, but I can't hit the zealots reliably. I'm looking for something that can bridge the gap to Ratha celpeze.

I believe you pretty much have to stick it out there. Best thing I know to bridge the gap to celps is shalswars.
I'm around the same skill level as you in weapons, and I've noticed them slow too, but gryphons will teach over 400s. I'm sure it is worse for being weapon primary, but the best advice I can give you is stay where you are at.

Its always tough to move to the next critter level, I've made a few trips to Ratha since a little after your skill levels and celps were still too tough, i.e. heals needed every 10-15 minutes.
I went back to purifiers and backtrained my defenses, I'd recommend purifiers for a bit, no skinning, but you said that doesn't matter. They are still teaching me pretty decent at the following ranks, I probably could go to celps at this point, but would rather milk the purifiers for a bit longer especially since I'm sure the celps will still require active healing.
Here's how the purifiers are teaching after roughly ten minutes of dancing with 4.
Shield Usage: 415 15% mind lock (34/34) Leather Armor: 463 29% mind lock (34/34)
Parry Ability: 500 80% interested (12/34)
Multi Opponent: 419 57% intrigued (16/34)
Heavy Edged: 464 99% clear (0/34) Twohanded Edged: 472 48% learning (3/34)
Brawling: 406 67% engrossed (27/34) Evasion: 456 38% mind lock (34/34)
Perception: 414 66% dabbling (1/34)
A few negatives about the purifier area is its extremely difficult to get help if you die, and getting in and out of the area is a bit of a RT. Probably would recommend grabbing a few favors and doing the immediate depart thing if you don't want to get frustrated. The room with the branch is the way in and out.

Probably not wrong, but I didn't fully cap out young gryphons either before I moved. But I'm backtraining weapons in young gryphons now at 300ish ranks with 60 agility and not having any trouble moving them. I'm surprised they've become an issue already.
As for dobek spawn, it can be awesome. IF there are other people hunting in there. It's sort of hit or miss.

There is actually a 2nd tier of Young Gryphon; the ones up the rope, rather than in the den area, are reasonably stronger. The gen rate can be erratic at times but they'll easily teach to 400+. It's difficult to get a crowd of them at times so you may have difficulty keeping a steady rate of Multi Opponent going though, and you may need to wander a bit if you're the only on up there due to the number of rooms.
There is an occasional mature/adult gryphon, but both are generally easy to avoid if you don't want to deal with them. Matures aren't much stronger than the Youngs, but their knockdown can be a hassle. Adults I wouldn't bother with just yet, personally.
