My favorite fish recipe by far. Though it is the dish I always eat at Red Lobster, it is still my favorite to eat at home or out on the town.

FISH IN PARCHMENT

8 oz. firm white fish
1 tbsp. butter
2 tbsp. grated carrot
1/2 tsp. chopped parsley
2 tbsp. thin sliced celery
1 tbsp. chopped green onion
1/2 tbsp. anise flavored liquor
1 tsp. lemon juice
Salt & pepper
Parchment paper 14x14"
(sometimes I add 2 Tsbp of chopped parsley, dil, or whatever herb I am feeling at the time)

In the middle of parchment paper place fish fillets. Top with melted butter and sprinkle with all other ingredients. Fold parchment like an envelope. Place on baking sheet. Bake at 400 degrees for about 20 minutes. Cut top of paper open and serve in paper.
