IM me at unboundbyrules let's compare stats/skill/strats. My thief is circle 86 and wears full leather as well. I don't feel I get stunned very much since 30-something circle (and IIRC Zinaca was 30~40 back then)
I'll add to the hearsay that I've heard discipline helped with stuns and have at some points explicitly trained discipline for that purpose on young chars.

I could be wrong about this, but I always thought stuns were most likely to occur if you were hit in a place you were already wounded. Thus using herbs regularly in the field might be helpful.
However, I think the real issue here might be your game lags. Are you sure that it's the stun that causes the game to freeze, and not the other way around? Because I can think of no reason a stun would cause a game freeze (unless maybe your front end has difficulty updating your "status"?). A game freeze, however, can often mean things happen that you aren't able to respond to, which may lead to a stun.
In any case, I'd say definitely check your internet connection. Is it slow to load pages sometimes? Is it slow to ping the DR server? (I've never tried this although I assume it can be done.) You might want to check with your provider or upgrade to faster service. Or possibly try a different front end if you think that might be the problem.

A stun from a normal hit is related to % vitality loss. So if you have higher vitality to start with, you can often avoid entirely. Courage will certainly help, in this regard.
Some things that give you stuns contest discipline and stamina first, but not everything. Once you have received a stun, nothing shortens it except certain spells/effects.
So in general, stamina and discipline will help reduce stuns, but not in every case. When you're defending against SvA spells like dazzle, reflex or agility will help, but stamina will not.

But actually I got gifted a netbook that is wireless capable. So I've been playing with that, using wireless connections.
I'm not saying the stuns cause the freeze though. Just seems like the game freezes just as the stuns occur.

Try to avoid wireless for ANY latency bound connection(gaming). Semi-high technobabble ahead:
Wireless vs wired connections use different concepts to access the 'physical media'
Wired: CSMA/CD (Carrier Sense Multiple Access/Collision detection)
Wireless:CSMA/CA (Carrier Sense Multiple Access/collision avoidance).
In essence on wireless, you, and everyone around you are all sharing a single media to send your data. The air. It would be akin to having all the devices around you, including your neighbors, trying to use the same network cable to talk to each other. They use RTS/CTS (ready to send/clear to send) protocols. So your traffic can be delayed if multiple people are using your same access point, or can have garbled transmission when you have channel overlap in your area.
tl;dr - Stick to wired connections if you can.

This sends up a red-flag for me. Depending on how your wireless is configured intermittent connection drops and lag-spikes could easily be traced to this. Someone with more experience with windows boxes might be able to help you figure out if this is the problem.

I was reading a statistic on teh interwebz (so it must be true) that went along the lines of "More then half the computers in american homes are unused/old, and if these (packrats) people would actually thrown them away we'd have a crisis b/c of all the toxic chemicals in them." So there you go Zinaca, hanging onto that old piece of junk is good for the environment (hippy).

It could be. My wireless Linksys died the other day and I got a new one and it was doing the same thing.....freeze then massive scroll.
Grim45 mentioned about how wireless can get garbled because of other routers around. To (possibly) fix this go into your router config and change the wireless channel from the default. Change it to 11 or something instead of 6. I did this and my router started working great.

Good rule of thumb. Additional info about it. Channels 1, 6 and 11 are the only "non-overlapping channels". That is 1 doesn't overlap with 6, which doesn't overlap with 11. 2,3,4,5 all overlap with 1 and 6, 7,8,9,10 all overlap with 6 & 11. 6 is the most common channel that those who don't change their channel are on. There are quite a few downsides to wireless.
Expounding on (and agreeing with) the technical mumbojumbo Grim45 said, and hopefully clarifying it a bit, wireless is generally slower than wired, and more finicky. Wireless is half-duplex (send or receive), whereas wired ethernet can be full-duplex (send and receive).
Since wireless devices are not separated onto different cables to prevent collisions (2 or more devices transmitting at the same time in overlapping frequency ranges), collisions can always happen. When this happens with wireless, none of the transmitted signals can be understood by the receiver. Furthering this problem, since wireless is half-duplex, a transmitting device is not able to listen for received data concurrently. So, when two devices transmit at the same time in overlapping frequency ranges (collision), neither device has any way of knowing the collision occured.
This is what Grim45 was referring to when he mentioned the CSMA/CA algorithm (the CA stands for Collision Avoidance). CSMA/CA reduces the statistical chance for a collision, but doesn't outright prevent it. So, with wireless, each device requires an acknowledgement of every frame sent in order to be certain the sent frame was received. Oh you folks are sooo good! Thanks for all the info and I will definately look into changing the router from 6 to 11 or something.
And I did train disc and got my strength up to 40 (my bad, it was 38). Also took some in game advice I got and am backtraining MO. It's only 243 and since I been in genis backtraining it, I have had no problems except waaaay too many boxes to pop. But it's all good.
So what should my MO be to handle bristly peccs, and young, fledgling gryphons safely?
You know, by now I thought, at circle 76, I would be out on the islands hunting something exotic. Never dreamed I would still be on the mainland hunting stuff I hunted at circle 50.

Hard to give an accurate value there but i'd guess somewhere around 270 to be relatively safe in all leather with SOP and SOTT up.
If you want to hunt something exotic on the islands, i recommend nipoh oshu. They'll teach you better than gryphons up to around low 300s in defenses and wont kill you. They dont drop boxes and are not skinnable but, for me, they served as a bridge from black leucros to gryphons perfectly.
If you decide to try them, here's some important info:
They live in a dark cave so you wont be able to see the rooms. The 2 rooms that have light are bad in terms of life mana.
You'll want to try the harder ones (to the north of the curtain) and, if these are too hard, try the ones to the northeast of the curtain.
There's milk in town for Lucky. Grab a picnic basket in the flower and shop and fill it up with milk in the backroom of the same shop.
The loot is great too. Around 1 gold kronar from every kill in the north area and they swarm. Bring gem pouches!

If you wanted to do something on the islands personally I found La'heke's on the Seerah at Ratha were kinda interesting to play with for a while especially since you don't use scripts for hunting, and you can back train shield there. I think they would work your MO until 270-ish too.

The order I usually go in is this:
Stamina to 20 (to eliminate fatigue issues)
Everything else to 15
Reflex to 30
Stamina to 25
Primary offensive stat (Agility, Strength, or Discipline) to 40
Reflex to 40
Everything else to 30
