Now I knew that horses attacked at melee when a Paladin was dismounted, but this occured, while I was mounted on top of my horse.

With strength, a gold-colored horse rears up to its full height and lashes out with its razor-edged hoofs at a granite gargoyle. A granite gargoyle attempts to evade, only slightly avoiding the blow. The hoof lands a solid hit that nicks its left forearm as it staggers slightly!
Moving well, a gold-colored horse rears up to its full height and lashes out with its razor-edged hoofs at a granite gargoyle. A granite gargoyle attempts to evade, twisting partially away from much of the blow. The hoof lands a good strike to its right leg as it falters slightly!

The granite gargoyle closes to melee range on you!
The granite gargoyle stops you from advancing any farther!

Moving well, a gold-colored horse lashes out with its forefeet at a granite gargoyle. A granite gargoyle fails to dodge, taking the full blow. The hoof lands a strong hit that just barely penetrates the skin to nick the stomach ('Tis but a scratch!)!
Moving well, a gold-colored horse snaps with wicked teeth at a granite gargoyle. A granite gargoyle fails to dodge, taking the full blow. The teeth lands a solid hit that scratches a long swath of skin along the abdomen (A fine wound to show to friends!)!

< With a steady seat on your gold-colored horse, you slice your war mallet at a granite gargoyle's right leg, soundly thrashing it with a massive hit that breaks the right femur and cleaves clean through the hamstring.

A granite gargoyle falls over with a grumble and a THUD.
[You're nimbly balanced and overwhelming opponent.]

A granite gargoyle grumbles and falls over with a THUD.
A gold-colored horse takes a bite of some nearby greenery.

You feel fully balanced again.

[Dragon's Spine, Canyon Rim]
The wind howls as you crest the side of the canyon rim, making it difficult to maintain balance. Nearby, a glacial river of ice disappears off the edge of the mountain. A large snow filled basin, corralled by craggy black glassy stone, slopes gently upward toward a notch to the north. To the northeast lies an outcrop of rounded grey white boulders while to the northwest the basin is obscured by heavy mist. You also see some copper coins, some bronze coins, a silver coin, a medium clear topaz, a gold-colored horse on which you are mounted, and a granite gargoyle which appears dead.
Obvious paths: north, northeast, northwest, down.

A granite gargoyle's statuesque form turns to dust and fades away

That's always been the case.

Problem is horse combat skills are about 20th circle and NEVER get much better.

Odd, for some reason my horse has never done that before, and has now since stopped attacking while I'm mounted on it.

If you utilize the bug/feature to make your horse advance and attack while showing up under assess it won't. But if you don't utilize that, it will.
