I would love if an older and/or more experienced Paladin could give me advice on my questions.
My horse won't battle if I'm mounted. Unmounted, he fights fine, and I can fight while I'm mounted. Is this normal? If I do the advance horse to pole, face critter route, my horse does show up in my assess and he will turn towards the critters while I'm mounted, but he won't fight while I'm mounted. If I do not advance horse to pole, face critter, he does not show up in my combat assess but he will fight the critter while I'm mounted.
Am I doing things right? Is this normal behavior, should I be doing anything differently?

I've been playing with horses since the day they were released and I never had any problems with fighting from horseback, or having the horse attack while mounted. The rider (paladin) must know "combat", the horse must know "combat" and "war." With this training it is possible to signal your horse to "attack" have it fight at tour side and while mounted.
You are saying:

This would indicate that the horse does attack when mounted but the issue would seem to be that your horse does not show up in your "assessment" while you are mounted. This is normal from what I have seen. You are mounted. You and the animal are a combat unit. If you are facing critter "one" at melee range and your mount is facing critter "four" which is behind you then I suggest you check your saddle orientation.

My horse WILL fight while I'm mounted IF I don't do the trick of first advancing him to pole, face a critter, which is the method I read to enable the horse to show up in combat assess. (I heard I should do this only once and he will remain in this configuration until I stable him again.)
If I do the trick of advancing him to pole, then he does show up in combat assess, but he does not fight while I am mounted. He turns to face the critters, but I do not see him attack at all.

I don't know if I'm making myself clear. When you combat mounted on your horse, do you first after retrieving him from the stables do the "advance horse" trick? If not, are you able to simply mount your horse and enter combat with your horse showing up in your combat assess and your combat messages indicate you are mounted, or does this happen only if you have previously in the day "advanced" your horse to pole, and then retreated?
Both myself and my horse have learned combat, the horse has learned war. I cannot learn mount at melee until I'm higher level (although I don't know what level it is I can learn it). However, I doubt that actually mounting the horse while I'm at melee has any affect on what I am talking about.

I have not yet bonded, it seems, and I've heard it takes quite a long time to do so. Maybe that's my problem? Maybe my horse won't attack while mounted under the circumstances I describe until I have bonded? Do you remember before you bonded with your horse if your circumstances were different? I keep mentioning the horse not fighting while I'm mounted, but remember, the horse does fight while I'm mounted if I have not advanced the horse first in the day some time and thereby getting him to appear in combat assess. Otherwise, the horse will fight while I'm mounted, but he does not show up in my combat assess and my combat messages do not indicate I am fighting while mounted.
