just curious when my wolf finally gets around to moving from baby to young will it happen while he's out and about with me or when I summon him the next time?

IIRC, depends when the timer is up.
If its up and hes away, the wolf will walk away when you bring him in, and come back older.
If its up and hes out, the wolf will walk away and come back older.
In both cases you normally have to feed the wolf right away so be ready to go find and carve so meat.
