I understand SHIELD is extremely important now.
I plan to backtrain a lot of things -- weaps, other armors, etc. as I bring it up to par.
My question is, when choosing what to hunt for backtraining -- do I need to use my shield level as the determining factor in what I hunt?
If so, how should I set up my STANCE?
EXP BONUS -- does it pay for me to keep them toggled off until higher levels (I'm assuming the higher the level, the slower)
BEST WAY TO TRAIN BOW these days? Used to be the retreat, retreat, hide/stalk -- I understand there is a penalty applied to ranged with every retreat now?
Looks like MULTI is now Defending/Melee Mastery I assume? Advice on dancing with 2 or 3 of anything? Major penalties? Probably best to just figure out my limitations on my own with this....
Oh, and CHARISMA -- you can tell, way back when how important it was... Any reason I should start bringing it up?
Thanks for the time.

Heya and welcome back!
Looking at your stats and from my experience, raising your discipline would help your shield learning.
For everyday hunting, I stance 100 to evasion, 40 to parry and the rest of the stance points to shield. I think you would do well in brocket deer in Langenfirth.
For bow use, 100 evasion 0 parry and the rest into shield (80+ or so?). For bow learning, at the minimum cast STW for dual loading and extra bow ranks. Also cast Sott, sks, inst, and em if you have them. This will help with sniping, the main learning source for ammo ranged weapons. If you don't have snipe, poach your target. Buy the best arrows and bow you can afford. At the moment, arrows seem to have more of an impact than bow choice.
EXP Bonus, I left mine off as I am waiting until skills get to the high slower learning levels.
Defending is supposed to help resist enemy tactics... your other defensive skills (armor, evasion, etc) combined work in place of multi-opp...
Melee mastery is supposed to help with backtraining weapons. Just a hyperbolic example, 100 in melee mastery and 10 ranks in polearm, should act like 80 ranks of polearm...
Charisma is good for TM spells now and obtaining a wolf companion.

You should be able to mess with your stances to get to a point you can hunt at level and keep your shield Mind locked. Just play with it.
That being said.
At the end of the day to get shield from 40 - 100ish ranks might take a week to ten days, so if you are backtraining some other weapons too even yourself out, or just for fun just go backtrain for a week and make sure you keep that shield pumping. Maybe pick up another weapon or three.

There is persistent confession about the defending skill. It replaced multi opponent on the defending side:

Possibly it is also a ur skill?

You can also save multiple stance presets.
https://elanthipedia.play.net/Stance_command
I have two stances I use:
Shield:
Evasion 100, Parry 5, the rest in shield.
Parry:
Evasion 100, Shield 5, the rest in parry.
I alternate between those two stances as I hunt. When I am training a bow I make sure I stay in shield stance.
stance shield
stance parry
..to swap between stances
