So I'm curious if there's any benefit to leaving pathways up while I'm hunting, or if I should just start it, cast the spell, and then end it. Does the bonus grow with the time that's been active, or is it an on/off switch?

The effect does not change while a pathway is up, however Wythor recently changed the startup versus running costs such that it is generally better to leave it up than start/stop.

It isn't quite that simple. You are correct that startup is more expensive than it use to be, but your optimal strategy depends on your pool size and casting habits.
If you leave it on constantly, you will inevitably run out of focus, no matter how big your pool is. But if your pool is big enough, and you cast few enough TM spells, you can start/stop it every time and never run out, even after the changes.

I only use APs in difficult situations, so this is generally what I do.
