I am wondering if you buy robes that are padded and then get greaves, aventail and a helm if the padding works on the covered areas, too? And what if you have padding on the greaves or aventail- do you just get the padding on that specific area in those cases? What if you wear crit padded robes, damage padded helm and greaves? How does this work?
I am asking because may want to buy some robes but make them into fulls with greaves. That and I'd like to know.

Adding greaves will not change the effect of cloth armor. As it is in effect skin with an enchant there is no "coverage" to add with accessories.
If you do wear an accessory with some mechanical effect it will half the padding (on both pieces). Unless it is the same type of padding and then it will take the higher of the two.

Armor add-ons somehow magically take on the characteristics of the armor they are added to. If you add greaves and helm and such to light leather, you end up with something that resembles double leather as far as coverage, but isn't as good mechanically speaking. Adding them to torso chain gives you something resembling inferior hauberk. Etc.
Robes already cover the entire body, so adding arm greaves, for example, is sort of like sewing an extra set of cloth sleeves on; totally pointless. The exception, of course, would be add-ons with special properties.
