My Primary and Secondary weapons are just coming up into this range. I have an odd problem, however. While I've had no trouble at all using gryphons to keep my weapons moving up, I'd like to switch it up a bit. The problem I'm having is that my average defenses (evasion and shield considered) are running at about 75% of my weapon skills. As pike forging is the primary goal of this whole character, and halberd forging is a distant second, how exactly does one go about continuing to push weapons on to about 300+ ranks? My current strategy is to stack stamina, wear HP, and never hunt at level without stone active. I usually use blood too, but that is just to keep the weapon skills moving fast.

I've seen the same thing Plat-side, though your barbarian is much bigger than mine. Adding an extra weapon to the mix and stancing to evasion seems to help.

You might occasionally have to wait for your defenses to catch up so you can move to another hunting area.

While I appreciate the advice, the question was less about how to get my defenses up and play the game "normally" and more about how to continue using the model I have with more advanced critters. Questions I was hoping to have answered were:
A.) which critter is this most viable with as ranks progress?
B.) Are there alternative solutions that don't require me to sacrifice my pike/halberd advancement and still survive long enough to lock them?
Ultimately, Pike and Halberd advancement are the focal points. Having effective defenses is nice, but backtraining them takes away time from FF advancement. I'm only willing to backtrain defenses when all critters who teach me weapon skills kill me before I can lock weapon skills. Seeing this as a possible eventuality, as I know that 1-hits become increasingly common as skill ranks progress and that my stone/plate thing will only last for so long, I have been getting other forgable weapons up to speed so that I can advance SOMETHING while backtraining defenses, but I'd prefer to get back into the fray working on pike and halberd (QS and SS where available).

As was said, after a certain point you have to let your defenses catch up. It's doable to push ahead pretty far with a ranged weapon or TM but not with Melee weapons. You're going to get creamed after a certain point.

If you're looking for creatures that teach weapons at 26+ and dont kill you with 200 in defenses while berserking stone... there's third tier nipoh oshu, caracal, gryphons, genie and a few others.
Realisitically, in the long run, you'll reach your FF goal faster if you keep your defenses at level.
Also, you can have a second account teaching you these 2 skills. You wont need defenses and can very easily keep these skills moving at optimal pace.

Train lots and lots of melee weapons.. more than you have defenses. longer melee combat training = more defensive ranks.

A)The usual progression is gryphons > apes or celpeze. Continuing with your current training method, both of those will squish you into a puddle.
B)No.People have been trying to correct your training method for as long as you've been posting on the boards. Your method breaks down further and further as one progresses up the critter ladder.
