2 points can be used to define a straight line, however with 3 you can try and predict what kind of curve your data has.

Geometrically speaking, three points can, in fact, "make" a line, assuming that they are colinear points.
However, I doubt that such a wonderful thing is going to be readily apparent, so all everyone is doing right now is making assumptions.

i can easily choose three point that are not in a line
a line contains an infinite amount of point, yet those points are strictly defined from the equation of that line.
2 points are used to make a line, a third point used with a normal vector crossed with the line makes a plane
it is like saying a circle is an ellipse, which is true it is just a special form
a line is a special form of a curve.
