No beans in the chili? That would be like hamburger soup. You gotta have beans in the chili, have to. Itsa must. Along with a dash of Dave's Insanity Sauce. Or more a dab than a dash, maybe a tooth pick half drenched in the sauce and than mix it into a HUGE pot. That stuff is potent.

It's really not necessary. I generally don't add beans to my chili.

Do you have the SUR (Scoville Unit Rating)? I tend to use straight habeneros, though I do have a bottle of 240,000u The Bomb: Ground Zero that I keep around "just in case."

Dave's Ultimate Insanity, which has been reported variously as from 90,000 to 250,000 on the Scoville scale and comes with a caveat Use this product one drop at a time." Keep away from eyes, children and pets. Not for people with heart or respiratory problems. A recent introduction is Dave's Private Reserve which comes in a coffin-shaped package and has been reported variously as from 500,000 to 750,000 Scoville units.

The first time I ever tried Dave's insanity sauce, I was floored...literally....

I was working for AMF Bowling centers at the time that a friend brought me a sample of it. Working the front desk on a saturday night. Right before Extreme Bowling started.

I took a dab on my pinky on the cap. That was it, a dab..itty bitty dot. I nearly came out of my skin, my eye's, I couldn't see through them, they were crusted over nearly immediately from the tears that shot out. I stumbled over the counter, onto the floor, crawled my way to the snack bar, gagging and wheezing. I got the snack bar, they already had heard what happened. Of course the girl behind the counter JUST happened to be my wife also working the shift that night. I couldn't see her face much less anything at all. All I could HEAR was her laughing at the shape I was in.

I downed a loaf of bread and nearly a whole gallon of milk trying to get my taste buds back, along with my eyesight and my hearing, by the time I was done, everything was throbbing. Even the bowling center! My boss had to come out of her office to watch the front desk for about 10 minutes while I literally cooled off. I was drenched in sweat. It was hilarious after about 30 minutes of me not being able to breath or see much less being coherent on what was going on.

Dave's insanity sauce is just..heh..wow...goooood stuff, no more than a toothpick full in a big vat of chili. You don't need more than that. I guarantee it.

Crazy people desided natural peppers wern't hot enough so went and started useing various % of pure Capsaicin in "hot" sause. No real flavor though.

Blah, I hate that. I LOVE spicy food, but I hate hot for the sake of hot. And that's speaking as someone who once ate a gob of real wasabi the size of a 50 cent piece on a dare.

I have a recipe to share though. It's what I make when I want something that tastes good without a lot of effort.

Ingredients:
2 boneless/skinless chicken breasts
Half a stick of butter (real butter, not margarine)
1 shot of amaretto
Garlic, salt, and pepper
Almond slivers (optional)

Preheat your oven to 350 and throw the chicken into a deep square glass dish. Melt butter, pour over chicken. Pour your shot of amaretto over chicken (you can eyeball this, it's no big deal). Sprinkle on garlic, salt, and pepper. Cover with tinfoil and bake in the oven for 45 minutes to an hour - this can vary depending on the size of the chicken breasts and your oven so you'll have to check on it. Remove, spoon on extra amaretto butter from the pan, sprinkle almond slivers on top if you've got them, and serve with side dish of choice. I usually make herb and butter rice to go with it and add a bit of the amaretto butter to that as well.

It's a flexible recipe, almost impossible to screw up as long as you check on it every 15 minutes or so while it's in the oven and it tastes excellent.

Dave's is crazy hot. My dad threw his bottle out because he got some on his hand, washed it multiple times and 4 hours later, rubbed his eye with his knuckle and it burned pretty bad. This was the same night he tried to use it like he does Gunslinger on his potato. Wasn't a very good night for him, really.

I'd imagine the next few nights were also bad. ;)

Wasabi vs. old fashoned Horse radish. I still call it a draw depending on local growing conditions. Kinda like "sweet" onions planted in a high sulfur area. They will grab your attention. Horse radish is great for stoping sinus trouble in it's tracks. ;)

I grew up hunting/fishing so not going to freak flks out with strange foods. Howabout the wasiest Key Lime "pie" on earth?

(Cheating, I know.)

Frosty Key Lime Pie

6 tablespoons key lime juice
1 can sweetened condensed milk
2 cups heavy whipping cream, mixed with a beater until it is whipped and forms peaks


Mix the lime juice and condensed milk together, and then fold into the whipped cream. Fill a 9 inch graham cracker crust and freeze for 2 hours. Allow to sit out for 10 minutes before cutting.

Very true, but wasabi has a very distinct flavor that you just lose with horseradish. You especially notice it with sushi, but if all you're doing is putting wasabi in your salad dressing (like I do) then you could probably go either way and not notice too much.

Well I am still experimenting with stuff...but these ones had some new caramel-filled chocolate nuggets in them. They got hot enough where they outsides melted so the caramel soaked into the brownies.

No complaints here.

This whole discussion about food is NOT helping me any, either. I have a $50 Amazon GC back from my birthday in March and there was a 1 day sale on Amazon...they had the KitchenAid Artisan series mixer for 199, I think it was? With a $20 rebate. If I didn't need a new computer so badly (come onnnnnn tax refund!), I'd have pulled the trigger. Making buttercream frosting with a hand mixer is not fun.

My girlfriend (for lack of a better word) got the Professional 5 series for Christmas last year. That thing is a beast. It's pretty much the same as the Artisan series, but it's bowl-lift instead of tilt-top. She's planning on starting her own coffee shop, so she's slowly amassing a ton of pro-grade equipment, which means that in the meantime I've got a lot of nice toys to play with.

Best stuff ever. Good hot, even better the next morning cold for breakfast.

2 eggs beaten
1 can cream corn
1 can whole corn drained
1 box jiffy cornbread mix
1/2 cup milk
1/4 cup oil
1/2 tsp salt
1/4 tsp pepper
1/2 cup cheddar cheese shredded

combine all ingredients. bake at 350 for 1hr (until done).

Dangit, now I've got a hankerin to make some.

Might as well add in my Karoke

3 lb hash brown
2 green Bell Pepper
2 Red Bell Pepper
1 Yellow Bell Pepper(for visual more than taste)
2 green onion
1 Jalapeno Pepper (optional)
4 Eggs
1 lb 80% lean beef
1 bottle of Soy Sauce

spices:

Cummin
Chili Powder
Sage
Oregano
Olive Oil

1. soak the beef in a soy marinade for 24 hours (enough Soy to cover the meat, and a thin dusting of Oregano, Sage, Chili Powder and Cummin)
2. Dice the peppers and green onions and core and dice the Jalapeno pepper (use the skins only unless you want it real hot)
3. sautee the pepper/onion/jalapeno mix with olive oil for about 2 minutes or until warm
4. scramble the eggs in a seperate skillet until slightly runny
5. brown the hamburger, then drain the grease in a collander
6. stir fry it all together with the hashbrowns for another 3 minutes to spread flavor until the hashbrowns are a light golden brown.

Serve hot with warm saki and white rice for the authentic experience. Serves 8-10 (what can I say, I cook for an army)

ok, I'll finally add my cornbread recipe for everyone, and no, its not that jiffy box stuff..::Chortles::..I like to make all my meals home made. So here's the recipe:

1 cup flour
1 cup yellow cornmeal
3 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon coarse grained salt (can use kosher salt also, it brings out the taste better :)
1 cup skim milk
1/4 cup canola or vegetable oil
1 large egg or 2 large egg whites, lightly beaten

Heat oven to 400 degrees F. Spray a 9-inch square baking pan with non-stick cooking spray.
Combine flour, cornmeal, sugar, baking powder, and salt in a large bowl. Set aside.
In a separate smaller bowl, whisk together milk, oil and egg or egg whites. Pour the wet ingredients over the dry and, using a fork, stir until just combined. Do not overmix. Spread batter evenly in pan and bake 20 to 25 minutes, or until a toothpick inserted in the center comes out clean. Cut into squares or triangles and serve immediately.


Prep Time: 10 minutes
Cook Time: 25-28 minutes
Yield: 12 servings

If you want to spice it up ( I didn't put the spiced up version on the post) at the dry mix before adding the wet mix, put in about a tbsp of red pepper and a tbsp of chili powder.

In the wet mix: mince 1 jalapeno (not chopped, I mean mince it so the juice gets everywhere in the wet mix).

Than cover the dry mix with the wet.

For a browner crust of the cornbread, put your pan with the cooking spray/buttered glass pan, into the oven for about 7-10 minutes before you pour the mix into the glass pan. Than stick it into the oven.


Goes good with Chili and Hamhock and beans :-P

My husband go back and forth over this same subject. To bean or not to bean. He loves the beans in his chili whereas I will not put them in mine. His explanation is that beans give it flavor. Personally, I think that there are enough spices in the world to add to the chili that beans are nothing more than a filler. I'd rather taste the sauce and the meat - and the cheese!

I just have to disagree at this point... beans are important in chili, not for the flavor, but for the texture. Food is just as much about texture and sight as it is about taste. Also, for cooking for picky people or vegetarians, they can have some too and just eat around the meat
