I've been trying to figure out how LINK works for a few days. Whenever I try to link to someone I'm told that I don't know how, and perhaps I should ask an empath. Is it level restrictive? Something I have to learn? What exactly is it used for when/if I can use it?

You learn link by having another empath establish a link with you. That's all there is to it.
It's used to boost your ranks in a skill. How much is based on the ranks of the person you're linking with.

Thank you very much :) I asked an more skilled empath earlier to link with me so that I may learn and recieved the message that I was confident I had the ability to form my own now. However, when I try to link with my circle 2 empath friend to teach her empathy I get the message "Player has not requested a link". I've read the small bit of in game help and fussed with it for a while. I'm feeling dense, what am I missing? :(

the person wishing to learn empathy must link to you, not the other way around. After that you can teach just fine

Souv is always helpful when people ask him questions, so if you see him running around, feel free to ask. Empathy is, after all, a skill which cannot be taught in a lecture hall, only experienced in the field.

bah, magic is for wussies. Brawling... HAH! active experience gain by inputting circle, bob, and weave commands... HAH Be a real empath and get the crud beat out of you for your weapon ranks. Back in my day we didn't have life magic in hunting grounds because life magic was useless in combat and no one had any good spells. We were happy to be able to cast EWH with minimum prep. We charged our cam before we went into combat and used them sparingly and one at a time.
PS We also had to walk uphill both ways in the blizzard and snow to get to our hunting grounds and rock trolls were considered the best box droppers in the game. A puff could get rich if he had a good friend hunting those

Yeah...what other Empathy guild? If you're talking about what I think you're talking about, it's an alterna-Transference guild, not alterna-Empathy (and yes, there is a difference).
