I'm thinking about getting a horse. Can anyone give me the skinny? Just the basics about what I want to look for and how much it's gonna cost me. Of course, I want the best. Doesn't everyone?

At present.. if it were me, I wouldn't buy one right now. They aren't very useful at the moment and we've been hoping for 2 years that they would get fixed so they would be worthwhile.
But if yer determined to get one, any will do. Mostly the different descriptions are RP tools ya use to flesh out yer image of yer paladin. Mine is a 16 hand all white horse. If ya ever plan on outfitting yer horse will ALL plate armor, it will have to be at least 16 hands high to wear all the pieces.. otherwise the size doesn't matter much other than a smaller horse can be mounted by a short race like a dwarf without the horse having to know how to kneel first.
Your horse should be taught jousting, combat and war. Racial tolerance if yer one of the furry races like Rakesh. Kneel if your a short race and the horse is tall. There are other classes the horse should be taught but I'll let others speak to those.
Bottom line, I'd wait if I was you, but its your call.

While I wouldn't give my warhorse up, at this point I wouldn't buy one again. For prices, I think I paid 40 plat for the horse, and another 40 plat in training fees. (My horse isn't fully trained, I didn't bother getting the "fluff" abilities).
I like having her, from an RP standpoint. But mechanics-wise, its annoying. What I hate most is poof-bye-bye tack. I have the incredible ability to predict crashes and get my horse out minutes before the game goes boom. Then once it comes back up, I get to spend several plat on new horse stuff. I'd love to outfit her in full plate, but I can't afford it, even if the tack vanishes only once every 3 months. I got a 16 hand horse so when someday horses can be hurt in combat, and armor helps, mine can be as protected as possible.
I think the circle reqs on rider abilities is silly too. I think I can learn to fight from horseback as a Paladin at 20th, but I can't learn advanced riding until I think 40th. Yes, my horse and I can act as a team in combat, but I can't steer it well while galloping down the road.
I also don't enjoy the guesswork involved in bonding. I can pet my horse so much it gets a bald spot, but I really have no idea if I'm bonding with her correctly. I wish animal lore factored in somehow.
If you see your character on horseback, as I do with mine, by all means get a warhorse, but be prepared for the annoyances. Sometimes I just want to stable the darn thing and never let her out again, but looking "cool" prevails.
