For as much as I love lockpicks I feel like im maybe way behind any info with upcoming changes.
Making a lockpick right now is obviously thief only.
Are lockpick's going to be a part of tinkering?
Will they be just for thieves or for everyone?
Will store sold Keyblanks still be available?
Would a thief who wants to keep making lockpicks at the same quality he currently does, need to move all his mech to engineering?
Feel free to direct me to other posts if there's already been a slew about this... only thing I can really see is just a quick line on the wiki that says lockpicks fall under tinkering... and that blacksmithing can currently make keyblanks.

Probably. But it's pretty easy to get them made in forging 3.0

Not necessarily. In fact, it wouldn't surprise me if the difficulty of things like stouts became much easier to craft, while grandmasters became much harder. That said, taking it as a career and/or having the right techs and/or grandmaster tools might make it easier.

To accompany the lockpicking creation system rewrite, I intend to redo how locks work as well. In simple terms, boxes can have multiple locks and each lock can be one of several types. Certain lockpicks will get bonuses/penalties when used on a type of lock. Generally this means that, as a player, you have several options:
1). Use an all-around OK lockpick for everything with a small penalty (laziest option, closest to what we have now)
2). Take the time to find and use the correct lockpick and get a decent bonus (more micro management, not everyone will like doing this)
3). Use a lockpick that can swap between each type (rare)
4). Be a thief and use a special, thief-only lockpick that offers special advantages.
Granted, this likely won't occur until later in the year, but some variant of this is where we are headed. Ditto for disarm, but with player-made traps and trappable containers to go along with it.

I for one would not mind the Grandmaster quality goalpost moved further out. It would give me something to train for and make them something to value having if you can make them or get one.

If someone focuses all their efforts into excelling at one task, by choosing it as a career, putting 100% of mech lore ranks into that skill, and using at least a small portion of the 10 year long warning that the Mech Lore split is coming to prepare by training mech lore, it really shouldn't be hard to do quite well even if you aren't lore primary

I'm told that if I want a good moonblade I need weaponsmithing. I'm also told enchanting will someday be available. I've never wanted to be a weaponsmith. I've always enjoyed enchanting.

I was gone for a number of years. When I came back DR had many WOW like "careers". I'd just left WOW and had no interest. Now it seems I need to learn about this stuff. I have no idea where to look. I tried elanthipedia but I don't know what to look for.

Involvement with the crafting systems is entirely optional. So, pleae don't feel you must learn them just because they exist!
With the mech lore split 5 new skills will be added - Forging, Engineering, Outfitting, Alchemy and Enchanting. Each skill has 3 Disciplines under it that can be chosen as a Career or Hobby - an act similar to choosing a Guild that can never be changed. Picking a Career or Hobby gives a rank boost and bonus techniques to that Discipline.
Forging - Weaponsmithing, Armorsmithing, Blacksmithing
Engineering - Shaping, Carving, Tinkering
Outfitting - Gemcrafting, Tailoring, Artistry
Alchemy - Remedies, Poisons, Cooking
Enchanting - Runecarving, Binding, Invoking
Each Discipline will have its own set of craftable items and technique tree (25-30 techniques) that can be learned to provide skill bonuses and other effects.
Crafting Societies for each of the skills will eventually exist in each Province. Currently we have Forges in Crossing, Haven, Shard, Theren, Ratha, Aesry, Hib and a few other places. Engineering and Outfitting Societies exist in Crossing and Haven. These Societies have crafting trainers that can be STUDYied and work much like Guildleaders.
A Career or Hobby is not usually required to craft items. Techniques are not usually required to craft items. This should let you experiment a bit before jumping in. Crafting usually requires ingredients and tools, all sold at shops in the Societies or forged by Blacksmiths. Crafting also requires the use of instruction booklets where all the items are listed and where you study the page of the item you wish to craft.
Anyhow, it is a nice big old system that is about as deep as the current combat and magic systems. It is not meant to be mastered in an evening, and I recommend working with the Mentor Society or checking out Elanthipedia to get a better understanding of the basics. Stone carving is one of the simpler systems in that you can buy the instruction book, a rock and some chisels, and be making items in short order.

You only need 100 ranks in forging to get all the excellent bladed versions, even less if you only going for something specific. That being said forged versions of the weapon are still on average better, mainly because for the exception of the heavy moonblade, most are lighter than 5 density steel which detracts from their damage and do less damage than a HCS variant.
I'm not going to lie, I miss having a 36 stone two-handed weapon that I could summon on demand though. But the new moonblades are nice.

To put the DR crafting system in WoW terms, it would be like if everyone could use every single crafting profession in WoW, but you get to pick the racial "+15 skill" bonuses to any 2-3 professions that you wanted

If you set weaponsmithing as your hobby (moon mages get one career and two hobbies, I believe), you still don't have to train weaponsmithing in order to get the techs needed for the spell to work at the highest efficiency. Making a craft subset into a hobby gives you 6 free techs, which would even give you 1 extra left over.

As far as i know you don't get 6 free techs. You get an additional tech at mech/forging skill specifically for weaponsmithing at the same rank of skill you get a general forging tech for. So if you are a weaponsmith hobby, at 25 ranks you get 1 general tech and 1 weaponsmithing, 50 would be 2 general 2 weaponsmithing.

Very helpful information everyone. There is so much to take in I'm finding it a bit overwhelming. One of my greatest fears was I would "use up" something, not even sure what it would be, before I got to learning enchanting. It seems this isn't the case. I'm still going to be careful as I move forward. I would be very upset if there were some special something along the enchanting "tree" (?) that I would not be able to learn because I used them for something like weaponsmithing.

Nah, the only thing to be cautious about is picking a Career or Hobby. Techniques can be unlearned for a price and will be wiped entirely once the mech split occurs.
